Hello everyone, I am Andrea's son Peter. As some of you already know, my mother was admitted to the hospital on May 10 and had to have emergency brain surgery. She has been recovering and making progress over the past week and continues to get better with each passing day. It has been a trying time for my family, and I just wanted to let my mother's friends know how she is doing or where she may have went. Thank you to all of you for your well wishes and my mom will be back here posting in no time. Take care.

good morning my friends and yes it is meatless monday once again as ALWAYS in my house!

i want you to think pasta (oh so many to choose from...treat yourself and make or buy some FRESH and experience that is sooooooo worth it!)...fresh vegetables...olive oil...garlic...scallions...pesto and/or anything that comes to mind! i find that a splash of good white wine and a squeeze of lemon juice kicks up any oil oil and garlic base sauce and red wine and balsamic vinegar kicks up the red base sauces and i mean enhances the flavor to heavenly...now CREATE!!! serve it up with a salad and everyone will say YUM!!!!! any combination...experiment...you can't do it wrong!!!!! dig in and all will be happy and you will never miss the meat! i promise! oh yes...don't forget the crusty bread!!!

good morning friends and Happy Earth Day to you all! today is a day to celebrate the earth and to remember we must be the earth's caretaker...a job that is not being done very well at the moment! we must stop and remember all of the steps we can take in our every day life that will make a difference in the end. oh i know that people stop and say "like if i shut my lights off...that is going to make a difference...if a don't run the water so much...like that is going to make a difference...etc..." well bottom line -- it all makes a difference and there is so much we can do to help our mother earth. CELEBRATE every day! we need Earth to stay happy and healthy for all the future generations and for ours now. when i think about it...the word RESPECT comes to mind...we need to show everything on this earth RESPECT and it will flourish...the oceans and all it's incredible inhabitants, the earth, the rain forest, the skies, the air...every square inch if we showed respect this earth would be a better place for it.

A few things you can do to celebrate

eat GREEN!!!! have salads...pasta with tons of local vegetables...support your local farms...not only are you helping the animals but by cutting down on your meat intake...the methane gas in the air is decreased. try it -- i do it every day and it is wonderful! being veggie is not hard at all...it is a joy!

create a bird feeder or bird house with your little one...not only is it fun but you are teaching a new generation the importance of our mother earth and it's children...plus the birds will certainly thank you for it!

recycle...this should just be a part of your life...second nature!!!! create a craft with recycled materials...easy and fun!

give up bottled water!!!! get that filter and reusable water bottle...it is mind boggling how much plastic is not used and how the land fills decrease with this one easy step.

grow your own veggies...plan for your new garden! oh the rewards are so delicious!

plant a tree in your yard or donate in someone's honor or memory...such a wonderful thing.

remember to respect the animals that are on our earth...treat them with dignity and respect.

change a light bulb oh so simple.

drop your water temperature by 1 degree.

spread the word to everyone...remind them that all the little things they do are so incredibly important and they do make a difference!

morning everyone...it is no NEW news to everyone that i know that i am an animal lover and that i have a very special place in my heart for dachshunds. this morning my husband was reading the paper (USA today) and found a blog called: Frankie and Sparkles well the tears started the flow...my heart got warmer and i had to share this blog with you.

little frankie had a wonderful life on all fours for 6 years and then due to an accident at the kennel he was staying at he is now on wheels. he had immediate surgery but unfortunately it did not work. well the upside of this story is that frankie does everything that he use to and inspires children and adults alike! he teams up with his friend sparkles the dalmation and fire dog and shares love with all! i am telling you you must click onto their blog...watch the video and just look around...if you are not feeling well...this will make you smile...if you feel like complaining about an ache or a pain...this probably will make you think twice...one thing is for sure your heart will be happy and your faith in "good" people will be restored. this is a story for everyone...please take a moment to visit! in jersey we would say this dog ROCKS and ROLLS!!!

meatless monday and AVOCADOS!

morning friends! how are you this morning and happy meatless monday to you all...as you know every day is meatless for me but i wanted to share some vegetarian experiences with you all and hopefully you will add a meatless meal to your life...it is wonderful for your health...the environment and mostly for the animals : ) ok -- i have a new obsession and it is AVOCADOS! yes -- the fabulous green delight that you love so well as guacamoli (a big YUM!!!!) but i am eating it every day in a very simple form...i just take a nice ripe avocado, slice it in half -- tap my knife into the pit -- twist and remove and then i scoop it out into a bowl -- mash it a bit -- squeeze a quarter of a fresh lemon or lime on it -- add salt and pepper (i add hot pepper flakes) mix lightly and then put this delicious mixture on a nice piece of 12 grain toast -- but into twelve pieces and there is my breakfast...only 250 calories -- loaded with protein and HEART healthy natural avocado oils -- rich with nutrients and oh so tasty! give it a try! add your own slant to it which i do all the time but for breakfast i love it just like this! it is rich -- creamy -- the toast adds crunch and it is yummy and satisfying...give it a try! : )

morning friends! well sometimes you find something that you have to share and today i have one of those little treats for you. there is a gem of an art world tucked into the gorgeous suburb of summit new jersey the visual art center of new jersey and it is the a place where art comes alive...exhibitions...clasess...workshop...lectures...special events...and so much more! the walls are filled with magic for the eyes! every where you turn there is something else to gaze upon. now you would think i would be sharing those creations with you but no...i had to show you the bathroom...yes the bathroom! a group of ceramic students got together and had a brainstorm that took them 18 months to complete. they felt as though art should touch every fiber of the center so the bathroom had to be included...this is a bathroom where no magazines are required...just stare at the walls as the mosaics come to life and enjoy!

Meatless Monday...Asparagus!

morning friends...can you believe that it is meatless monday again! even though i spend all of my days meatless...i want to share with you new and old favorite vegetarian recipes that are easy and delicious. maybe you can add them in your diet...i never miss the meat : )

well i don't know about you but i LOVE ASPARAGUS!!!! and yes...they are in season!!!!!

i adore the rich and true flavor of this gorgeous vegetable so i use two methods of cooking them.

roasting...i first clean them (rinse lightly) then i trim the stalk. if you hold your asparagus and lightly bend it, it will break right where it is suppose to be trimmed (a built in helper) then you can trim them all at that line...easy and accurate! then i get a shallow baking pan...drizzle olive oil on them...a pinch of coarse sea salt and then freshly ground pepper and 3 cloves or fresh garlic smashed and chopped finely...toss lightly and put them in a 425-450 oven for about 10 minutes -- tossing once. keep an eye on them so they don't burn...depends on your oven...sometimes they take less time and sometimes a little more. you will never boil them again! they are delicious.

you can also use the frying pan method...do everything the same as above and add them into a hot frying pan tossing them a bit and adding just a little bit of water about 4 minutes in -- cover and let cook for about 3 more minutes and viola...delish!
(remember...you have to do things according to your taste...you might want them softer so of course more cooking time is needed. : )

one of my favorite things to do with these yummy treats is to toss them in linguine that has been prepared with a bit of olive oil and garlic with a bit of cooking water, squeeze of lemon and a splash of white wine and then topped with freshly grate pecorino romano cheese or your favorite grated cheese...or if it is salad you want to create...give this yummy dressing a try!

use your imagination and you will create tons of fabulous recipes! have fun and stay green! : )

Asparagus with Lemon Vinaigrette

1/4 cup extra-virgin olive oil (can use hazelnut or walnut oil)
2 tablespoons freshly-squeezed lemon juice
3/4 teaspoon fresh thyme leaves, chopped
1 clove garlic, minced
3/4 teaspoon coarse salt
Pinch freshly-cracked black pepper or to taste
2 pounds asparagus stalks, washed and trimmed

In a jar or bowl, combine olive oil, lemon juice, thyme, garlic, salt, and pepper. Store, covered, in the refrigerator. Serve at room temperature. (this dressing is from the vegetarian times and is excellent) if you would like add more fresh herbs that are complimentary!

morning friends! well Easter is right around the corner and many many people surprise their children and family with a friendly furry friend. unfortunately many of these precious little ones wind up in rescue because people think they are adorable but do not realize the time -- effort -- expense and care they need...plus they need tons of love that they so deserve. one of our friends from the CSSTEAM on etsy...suzanne maccrone from italiangirlingeorgia has always had a love to rabbits and always has her beloved guido in her heart and she has shared that love with her son and adopted a rescue rabbit named gucci! please drop by and read the story of guido and gucci. it is heartwarming and this is the perfect time of year for this uplifting story of love.

Meatless Monday!

HAPPY Meatless Monday to you all! : ) Hope you all have a fabulous and wonderful Week! As I told you last week...every day is meatless for me...but I really want to share with you some great meatless recipes that are fun and easy!

SO SIMPLE and SOOOOO Tasty! We all love love salad and we tend to add our favorite home-made balsamic vinegar and olive oil dressings, sometimes splurging with blue cheese and other yummy but caloric concoctions...well here is a little treat that I think you are going to love...it will spice up your favorite salad with a new taste and twist! It's a Thai Peanut Dressing that i think you are going to love. Now you can heat it up with some extra spices or you can leave it the way it is and it is mild and delicious. Put together your favorite salad or add some new items like fresh bean sprouts, thinly sliced jicama, thinly sliced cucumbers, some yummy avocado chunks or any interesting vegetable in season at your local market. How about adding some noodles! Then for some crunch, try flash frying some wonton wrappers (about 9 seconds) and break into pieces on top for a new crouton! YUM! how about some marinated tofu for some protein...your imagination will take you to delicious places!

Thai Salad Dressing

1/2 cup of your favorite peanutbutter
1/2 cup of apple cider vinegar
1 cup canola oil
1/2 of organic brown sugar
1/2 tsp freshly chopped chili, crushed
red pepper flakes, 2 tsp Sriracha or
2 tablespoons of very finely slices scallions
(the finer and smaller the better)
2 tablespoons of finely chopped roasted
peanuts

Now whisk these all together until they are creamy
and blended and pour on your favorite salad! YUM

Salt and Pepper!

Last night as I was cooking and using a large amount of fresh cracked pepper as I usually do (everyone in this house hold LOVES fresh ground pepper in abundance) my hand grew tired and I remembered the days when Mom has fun and unique salt and pepper shakers on the table and in the hutch. You see we also use course grain salt and that is in a little salt box with a spoon. I kind of miss those interesting little details in the kitchen but I do love the taste of fresh so I just did a little search on Etsy and had tons of fun doing so! Take a peek and add a little spice into your day! These are so much fun but when all is said and done...I will still be grinding my pepper and sprinkling my course salt...ah the sacrifices we make for flavor!

Morning to all of my friends...although every day is meatless for me...for those of you that don't know me, I am a vegetarian and the reason being is my love and devotion to animals, they are my heart (so is my family and friends : ) So, I wanted to share will all my friends the whole concept of Meatless Monday. The most popular Vegetarian of all times...Sir Paul McCartney and his daughters Stella and Mary launched Support Meatless Monday in the UK and now it is catching on Globally. So I thought I would share some healthful tips with you each Monday and I will start out slow and then share a lot of my own recipes and maybe create some new ones for you to try! So today I am going to give you a little over view and some simple recipes and then there will be lots of fun each Monday as we delve a bit deeper into the GLORIES of being a vegetarian! : ) Also I will be filling you in on the major benefits for the earth and the environment by going veggie and how much you will be doing by going veggie on Monday's.

Ok...Let's start with something easy and fresh!
Minestrone with Sun-Dried Tomatoes and White Beans

ingredient list

Serves 6
* 1 Tbs. olive oil
* 1/2 tsp. dried oregano
* 1/2 tsp. dried basil (or about 20 fresh leaves torn)
* 1 bunch of beautiful scallions slice small or 1 medium onion, diced (11/2 cups)
* 2 large or 4 medium carrots, sliced into rounds (1 cup)
* 3 stalks celery, sliced (1 cup)
* 6 cloves garlic, minced (2 Tbs.)
* 1 zucchini
* 6 mushrooms (your choice)
* 1/2 cup sliced sun-dried tomatoes
* 1 15-oz. can white beans, rinsed and drained ( love to use chick peas)
* 1 large potato diced small
* 1 cup fresh or frozen peas or green beans, cut into 1-inch lengths
* 2 Tbs. white wine vinegar (i LOVE balsamic vinegar)
* Add your favorite little pasta...Acini De Pepe, mini bows, mini shells...etc..
pre-cook -- drain and add right before serving. A shake of good hot red pepper
flakes adds a little kick!
(remember...you can add any other veggies to this yummy soup...go with the seasons... add what veggies look fabulous in your market...an ear of fresh corn adds freshness and a touch of sweetness! oh so many possibilities...go with the flow and what your tastebuds tell you...there is no WRONG : ) have fun and enjoy)...serve with a nice crusty bread and you will say YUM!!!!!

1. Heat oil (you can always add a tad more if you need it) in 3-qt. saucepan over medium heat. Add oregano and basil, and stir 30 seconds. Add onion or scallions, carrots, celery, potatoes, zucchini, mushrooms and garlic. Cover, and cook 5 minutes, or until onion is translucent.
2. Add sun-dried tomatoes, and cook 5 minutes more. Add white beans and 4 cups water, ( I use a good veggie broth such as Trader Joe's Vegetarian Broth, College Inn Vegetarian Broth or any good brand, also another great alternative is to make your own veggie stock and have it on hand in your freezer for when you make soup...we will go into that later in the Meatless Monday Series...and season with salt and pepper, if desired. Bring soup to a boil, reduce heat to medium-low, and simmer 10 minutes. Add peas, and simmer 3 to 5 minutes more. Stir in vinegar, and season with salt and pepper, if desired.

Well Spring has Sprung...I am not a fan of the REALLY hot weather but I do like my food with tons of spice...I have to share with you all one of the best condiments that you can add to your fridge...for those of you who love to "heat" things up...SRIRACHA is for you!!!!!! You can put it on everything, I love it on veggies, rice, pasta, toast (yes...toast : )...trust me if you like things hot and spicy this will become the new ketchup in your fridge! Just had to share that with you : ) ENJOY!!!!! YUM!!!

Well a very HAPPY St. Paddy's Day to you all! I think what this page needs is a wee bit of green. I am so honored to be the leader of the Cottage Style Street Team in the wonderful land of Etsy...so i decided to take a peek and see what my team had in the way of St. Paddy's Celebrations...well of course i was delightfully surprised!

The flight of the hummingbird

I was really thinking of my mother this week so i created something new featuring the hummingbird...pretty little silver bobbies... so I thought I would share with you my hummingbird story. The rapid winged hummingbird is very special to my family...For over 10 years we had a pretty little hummingbird feeder in our yard, hanging from the Dogwood tree. We kept in filled with sweet nectar and red ribbons flowing from the bottom and still there were no hummingbirds. Kept the vigil going, but still no fast winged beauties appeared. My Mother lived with us all of our married life...she was a part of everything in our lives and fortunately got to see her grandchildren(they called her Hema). She was very ill for almost 10 years and became bedridden and we cared for her at home the entire time...so you can imagine when she passed we were all so distraught, especially me. I needed some sort of peace with all of this... I didn't know what to do to calm myself down, I prayed which of course helped so much but I made a secret wish, I asked my mother to send me a sign to let me know she was ok. Of course I would not ask something that was easily accomplished so I asked her to send me a hummingbird and that way I knew she was in a wonderful place. Well, I told NO ONE of this wish! Absolutely NO ONE. A week after she had passed, my husband and son were in the backyard and I heard these screams! MOM get out here, you have to see. I flew outside and there was a hummingbird fluttering at the feeder...FIRST TIME EVER! Can you imagine my delight and when I told the family they were in "happy tears". So the hummingbird is so special to us all and I love to share this uplifting story with everyone...a little bit of hope goes a long way. Love you Mom.

Postcards for Satori

Morning friends...hope you are having a great day. A fellow Etsian is asking if we would all join together and make her little girl Satori smile. Little Satori has Spinal Muscular Atrophy (typeII). She uses a power wheelchair and can't walk or even crawl...but her Mom says she is a rock star...super sense of humor...wonderful grades a fabulous big sister and daughter.

She is extremely weak physically and she can on longer hold her body up, she developed severe scoliosis. The curve of her spine is starting to crush her lung so on March 31st she is having full spinal fusion.

Thank God they have wonderful health insurance and everything is covered...but they are traveling to Californina and Mom (Melissa Lewis from HautTotes.etsy.com) wants to have a fun project for little Satori so she is asking if you could kindly send her a postcard -- any postcard from ANY WHERE with a HAPPY message...they are going to have a map so they can sneak a little geography in there! Just a simple card and a stamp can make this little girls experience so much softer and kinder and who doesn't like to get GOOD mail : )

I do not know this family -- just read the post and was very touched by it. So if you can...get a cool post card -- write and uplifting message -- draw a picture -- use some special stickers...you are all so creative so use your imagination have fun you can start mailing on the 26th of March...those of you outside the US probably in about a week... send a smile to:
